Lamb Shank Potjie

100 ml oil
2 kg skaapskenkels
Half a green pepper, chopped
1 large onion, chopped
2 cloves garlic, crushed
6 rindless spekrepe, chopped
2 medium tomatoes, chopped
2 biefekstrakblokkies
salt and pepper to taste
250ml white wine
250 ml boiling water
5 carrots, peeled, sliced
12 small potatoes, washed
5 courgettes, sliced
400g mushrooms.

Heat oil and fry meat until brown.
(The browner the meat fried, the browner and richer sauce.)
Add the green pepper, onion, garlic and bacon and cook until beginning to brown.
Add tomatoes and stir-fry for 5 minutes
Add biefekstrak, flavoring agents, white wine and boiling water and simmer for an hour.
Add carrots and potatoes and simmer for 20 minutes.
Finally, add the courgettes and mushrooms and simmer for 15 minutes.
Fill liquid, if necessary.

Tip: Do not stir potjie during cooking process. Serve with rice, wheat or potjie bread.
